How to Use a HONE Rolling Knife Sharpener: Setup and Common Checks
Start with a compatible knife, secure support and the correct angle. The HONE rolling knife sharpener uses a magnetic Knife Holder to position the blade while the Rolling Sharpener moves along its cutting edge.
This guide summarises HONE’s published method for normal sharpening of a compatible double-bevel knife. Watch the HONE video instructions and FAQs for the demonstrated positioning, movement and accessory setup before you begin.
1. Check the knife and working surface
HONE is designed for magnetic, smooth-edged metal knives that can be held securely. Do not use it on serrated or scalloped blades, ceramic or other non-magnetic knives, scissors, or a blade that cannot be safely secured.
Work on a clean, stable surface. Remove loose metal particles from the knife-contact and holder surfaces before positioning the knife. Keep the Rolling Sharpener flat and use light, even pressure.
The two-sided sequence below is not the method for a single-bevel knife. Follow the knife manufacturer’s guidance and HONE’s specific instructions for that blade design instead.
2. Choose the appropriate angle
Check the knife manufacturer’s recommendation. Continue with the existing angle unless you intentionally plan to reprofile the edge. Changing the angle removes more metal during the initial sharpening and can take longer.
Secure the knife against the appropriate 15° or 20° holder face. If a different supported angle is needed, HONE AngleMate provides additional angle options with the standard holder; follow its setup demonstration rather than improvising an angle adjustment.
3. Follow the normal sharpening sequence
- Begin with the #400 Diamond Disc and roll evenly along the cutting edge, using the movement shown in HONE’s demonstration.
- Turn the knife over, secure it again and repeat on the other side.
- Continue with the #1000 Diamond Disc to refine the edge.
- Finish with the #3000 Ceramic Honing Disc when available. HONE’s instructions say to finish with #1000 if #3000 is unavailable.
This is the normal initial-sharpening route, not a requirement to repeat every disc for every touch-up. For routine maintenance, HONE recommends #3000 ceramic, with occasional #1000 use when more refinement is needed. The knife-sharpening grit guide explains that distinction and the optional discs.
Common questions and first checks
The first sharpening is taking longer than expected
The existing edge may not match the selected angle. HONE’s FAQ also notes that harder steels, damaged edges and intentional reprofiling can take longer. Do not treat a fixed number of passes or a time target as proof that the knife is finished.
The knife still does not cut as expected
Return to the setup and sharpening demonstrations. HONE’s FAQ explains that a bevel can be sharp while the apex leans to one side, and includes a separate 3-2-1 finishing demonstration. That is one possible issue, not a diagnosis of every dull knife. Avoid improvising extra pressure or a new movement when the cause is unclear.
A long or flexible blade needs more support
The HONE Extension supports suitable long, smooth-edged knives with sufficient blade height. It can attach to the standard holder or sit separately as a second support.
The HONE Fillet Knife Holder is intended for flexible, narrow or low-profile blades that the standard holder or Extension cannot securely support. Follow the relevant demonstration. Neither accessory makes the system suitable for serrated blades, and an unstable setup is not a reason to continue sharpening.
A disc feels smoother or the ceramic disc has changed colour
Diamond Discs can feel smoother during their initial break-in. Light metal residue or colour changes on the ceramic disc can also be normal. These observations alone do not establish that a disc needs replacing.
Clean up and know when to stop
Detach the disc before washing it with dish soap and water. Dry it completely before reinstalling it, and do not leave a wet disc attached to the Rolling Sharpener.
Do not continue if the blade cannot be securely supported or you are unsure how to maintain the demonstrated contact. For persistent cutting problems, an uneven edge, suspected damage or uncertainty about compatibility, ask HONE for guidance before attempting a corrective technique.
